  • 1 cup almond flour
  • 1 and 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon passion fruit extract
  • Yellow and pink food coloring


1. Begin by preheating your oven to 300°F (150°C). Line two baking sheets with parchment paper.

2. In a food processor, combine the almond flour and powdered sugar. Pulse until well combined and there are no lumps.

3. In a separate bowl, beat the egg whites until foamy. Gradually add the granulated sugar and continue whisking until stiff peaks form.

4. Carefully fold the almond flour mixture into the beaten egg whites. Be gentle to maintain the airiness of the batter.

5. Divide the batter into two bowls. In one bowl, add a few drops of yellow food coloring, and in the other bowl, add a few drops of pink food coloring. Gently fold the colors into the batters until they are evenly incorporated.

6. Transfer each colored batter into separate piping bags fitted with a round tip.

7. Pipe small circles onto the prepared baking sheets, spacing them about an inch apart.

8. Once all the batter is piped, firmly tap the baking sheets on the counter to release any air bubbles.

9. Allow the macarons to rest for about 30 minutes until a skin forms on their surface. This step is crucial in achieving the macarons' signature smooth tops.

10. Bake the macarons in the preheated oven for 15-18 minutes or until they are set and easily detach from the parchment paper.

11. Remove the macarons from the oven and let them cool completely on the baking sheets.

12. While the macarons are cooling, prepare the passion fruit filling. In a bowl, combine 1/2 cup softened unsalted butter, 2 cups powdered sugar, and 1 teaspoon passion fruit extract. Beat until light and fluffy.

13. Transfer the filling into a piping bag and pipe a dollop onto half of the macaron shells.

14. Gently sandwich the filled shells with the remaining macaron shells, creating beautiful and delectable macaron cookies.
