Ingredients:

• 2 pounds of boneless, skinless chicken breasts, cut into strips
• 1 onion, sliced
• 1 bell pepper, sliced
• 1 tablespoon of olive oil
• 1 teaspoon of chili powder
• 1 teaspoon of ground cumin
• 1/2 teaspoon of garlic powder
• 1/2 teaspoon of onion powder
• 1/2 teaspoon of paprika
• Salt and pepper to taste
• 1 bag of frozen tater tots
• 1 1/2 cups of shredded cheddar cheese
• Sour cream and chopped green onions for garnish (optional)

Instructions:

1. Preheat your oven to 375°F (190°C).
2. In a large skillet, heat the olive oil over medium-high heat.
3. Add the sliced onions and bell peppers to the skillet and sauté until they are tender and slightly charred.
4. Remove the vegetables from the skillet and set them aside.
5. In the same skillet, cook the chicken strips until they are no longer pink in the center.
6. Add the chili powder, ground cumin, garlic powder, onion powder, paprika, salt, and pepper to the chicken.
7. Stir well to evenly coat the chicken with the spices.
8. Return the sautéed onions and bell peppers to the skillet with the chicken and mix everything together.
9. Transfer the chicken and vegetable mixture to a greased 9x13-inch baking dish.
10. Arrange the frozen tater tots in a single layer over the top of the chicken and vegetables.
11. Sprinkle the shredded cheddar cheese over the tater tots.
12. Bake the casserole in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
13. Remove the casserole from the oven and let it cool for a few minutes before serving.
14. Garnish with sour cream and chopped green onions if desired.
