Making the Perfect Chicken Fajita Tater Tot Casserole

Ingredients:
- 2 pounds of boneless, skinless chicken breasts, cut into strips
- 1 onion, sliced
- 1 bell pepper, sliced
- 1 tablespoon of olive oil
- 1 teaspoon of chili powder
- 1 teaspoon of ground cumin
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of paprika
- Salt and pepper to taste
- 1 bag of frozen tater tots
- 1 1/2 cups of shredded cheddar cheese
- Sour cream and chopped green onions for garnish (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium-high heat.
- Add the sliced onions and bell peppers to the skillet and sauté until they are tender and slightly charred.
- Remove the vegetables from the skillet and set them aside.
- In the same skillet, cook the chicken strips until they are no longer pink in the center.
- Add the chili powder, ground cumin, garlic powder, onion powder, paprika, salt, and pepper to the chicken.
- Stir well to evenly coat the chicken with the spices.
- Return the sautéed onions and bell peppers to the skillet with the chicken and mix everything together.
- Transfer the chicken and vegetable mixture to a greased 9x13-inch baking dish.
- Arrange the frozen tater tots in a single layer over the top of the chicken and vegetables.
- Sprinkle the shredded cheddar cheese over the tater tots.
- Bake the casserole in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
- Remove the casserole from the oven and let it cool for a few minutes before serving.
- Garnish with sour cream and chopped green onions if desired.
