Ingredients

  • 200g unsalted butter, softened
  • 165g granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 300g all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons matcha green tea powder

Instructions

To prepare these delectable Marbled Vanilla & Green Tea Cookies, follow these simple steps:

  1. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Divide the dough in half. Leave one half plain and add matcha green tea powder to the other half, mixing until fully incorporated.
  6. On a lightly floured surface, roll out both doughs into rectangular shapes of equal size.
  7. Place one dough on top of the other and gently press them together.
  8. Starting from one end, tightly roll the dough to create a log shape.
  9. Wrap the dough log in plastic wrap and refrigerate for at least 2 hours, or until firm.
  10. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  11. Remove the dough log from the refrigerator and slice it into ½-inch thick rounds.
  12. Place the cookie rounds on the prepared baking sheet, spacing them about 2 inches apart.
  13. Bake for 12-15 minutes, or until the edges are lightly golden.
  14. Allow the cookies to cool on a wire rack before serving.
